A nice roasted eggplant that is caramalized on the outside and soft on the inside
Chef's Note
Roasted eggplant is one of those recipes that looks fancy but is actually incredibly simple. I learned this technique from a chef friend who insisted that the key is cutting the eggplant into larger chunks rather than thin slices. The result is a beautiful caramelization on the outside while staying tender inside. Perfect as a side dish or tossed with pasta.

Description
A nice roasted eggplant that is caramalized on the outside and soft on the inside
Ingredients
- 1 Large eggplant
- 1 tbs salt & pepper
- Olive oil
- (*optional) thyme & a lemon
Preparation
- Cut the eggplant into thick 3cm slices, then cut each slice into pieces to form big cubes
- drizzle with olive oil, sprinkle with salt and pepper then toss well in a bowl
- 240Β°C for 20 minutes, flip and leave them for another 10 min
- Add some thyme and squeeze a bit of lemon juice on top to finish it off
